Presto – pasta!

I’m convinced I must have been Italian in a previous life. I fell immediately in love with Rome during a whirlwind high school tour eons ago; one of my fondest memories of that trip was celebrating my 16th birthday in the Eternal City. I was so enamored with Italy, I proceeded to take two years of Italian in college. It wasn’t until last year that I finally got to return to this beautiful country, tagging along with hubby on a business trip through Milan and a little slice of the countryside around Parma and Bologna. We’ve since been back to Milan twice more within the past eight months for quick stays, but I haven’t yet revisited Rome, Florence and Tuscany; or made it to Venice for the first time.

Italian food is probably my favorite cuisine to cook. Pasta, tomatoes, fresh herbs, roasted meats, cheeses, breads, wines — what’s not to like? When you start out with ingredients this fabulous, you really can’t go wrong. Plus, the preparations are usually fairly simple, often requiring little more than a drizzle of olive oil and a few grinds of salt and pepper.

Hubby gave me a pasta machine for Christmas. As in, one of those stainless steel thingys legit chefs use to roll out pasta dough to paper-thin thicknesses. This is the kind of contraption I often find intriguing, but would never in a million years think to buy for myself. Like the waffle iron my brother gave me two years ago, which I’m ashamed to say only saw use for the first time back in October.

One of my New Year’s resolutions is to be more fearless when it comes to cooking and stretch my culinary boundaries. No time like the present to dive right in.

A chef acquaintance recently sent me an email that said making your own pasta at home is one of the easiest things in the world to do. I didn’t quite believe him. I can recall making homemade noodles from scratch on precisely one occasion, and they weren’t great. My last attempt at gnocchi was pretty good, but wow, what a lot of work.

The pasta machine looked a little intimidating when I opened it up, consisting of several heavy parts that linked together and a c-clamp to attach the whole thing onto the edge of a counter or table. All the pieces arrived slickly oiled, and the directions for cleaning warned against washing with water, instead instructing to dust the whole apparatus with flour and then feed dough through every orifice to de-oil.

At hubby’s suggestion, YouTube came to my rescue. A quick “how to make pasta” search uncovered a very helpful tutorial that bolstered my confidence. Mentally telling myself that Italian grandmas and Top Chefs do this all the time without batting an eye, I rolled up my sleeves and got to work.

I say this in all sincerity — making pasta at home is not that hard. It’s true. It just takes a little time and some elbow grease. Flour, eggs and salt are the only ingredients you need. No joke. It literally costs pennies per serving.

The first thing you do is dump a good amount of flour onto your (it goes without saying, VERY clean) surface. Mound it up into a pile and create a well in the middle, into which you crack a couple of eggs. Sprinkle on enough salt to lightly cover each yolk. Then, very carefully so as not to collapse the walls of your flour fortress, you blend the eggs with a fork, slowly incorporating flour all the while until it becomes an oozy, sticky blob.

Once the dough is fairly together, you can start kneading it, adding more flour until it becomes smooth and dense. This part takes some muscle, I was surprised to find. You keep folding the dough in half and pressing it out again and again. It takes about five minutes until the texture becomes smooth and pliable, then you form the whole thing into a ball and let it rest for about 10 minutes.

I felt like a mechanic getting the machine c-clamped onto the counter and cranking a test batch of dough through all the openings. If there’s an adult equivalent of playing with Play-Doh, this must be it. Hubby even got into the picture. Maybe I’m easily amused, but it was so much fun to see the delicate sheets of pasta becoming impossibly thinner and thinner, finally emerging from the cutter as threads of spaghetti and thick linguine. When all was said and done, the entire kitchen was coated with a fine dusting of flour, but we had two cookie sheets full of pasta drying for dinner.

The pasta looked gorgeous, but I was secretly terrified it would turn into a gloopy, floury mess once I dropped it in to cook. I whipped together the simplest of tomato sauces as I waited for my pot of water to boil. Holding my breath, I eased in the first batch of noodles. It held together and after a few seconds, floated to the top of the water, looking like actual fettuccine!

I boiled the pasta for about four minutes as per the instruction booklet, then cautiously fished out one of the noodles and slurped it into my mouth. Joy of joys – it was fantastic!!!

I quickly drained the fettuccine and tried my hand at the angel hair. It only took about two minutes to cook, and was terrific as well! Mamma mia, what a revelation. Hubby complained only once to say that the kitchen smelled like boiled eggs when I started cooking the pasta, but he shut right up after I stuffed a noodle in his mouth.

The texture of the homemade pasta was perfect, so unbelievably tender and worlds better than store-bought dried brands. With a light coating of the tomato sauce and a sprinkle of Parmesan cheese, it was a delicious meal, if I do say so myself. I couldn’t have been prouder. Even my picky-eater son and stepson scarfed down their entire servings.

I can’t wait to experiment with different shapes and creative add-ins for the dough. Next up, cannelloni. Or perhaps ravioli. Maybe a fettuccine alfredo. The possibilities are endless… buon appetito!

Buon giorno, Milano!

We’ve been in Milan for almost a day now, and here are some of my first impressions…

I must start by mentioning, the train ride here was HELLA long. Two transfers (Zurich, Switzerland and Lugano, Italy) and took about 10 hours start to finish. The scenery was beautiful – journeying through a portion of the Alps was particularly spectacular. Hubby is still fighting off a cold and tried to rest as much as possible; the toddler was a little super trooper and tolerated sitting on our laps, napping and looking out the windows for the most part of the trip. It was an exhausting day, and we were never so glad to pull into Milano Centrale at long last.

I think the train station itself is probably a taste of what’s to come here in Italy. The place looks like a museum. Or a cathedral. I’m not sure which. It is gorgeous with a huge domed ceiling that belies something greater than just a commuter stop. We managed to lug all of our bags into a taxi and cabbed to the hotel.

Our hotel is perched on the corner of a busy street. The room is smaller than our digs in Cologne, but the bed and the pillows are more comfortable. It didn’t really matter much last night – after 10 hours on trains, I could have slept on the sidewalk. The toddler is enchanted with the bidet in our bathroom, which concerns me a little bit. We’re staying a ways out from the main city center in a more residential area of apartments. A quick glance around confirms that there may not be much to do within walking distance of the hotel, unlike in Cologne where everything you could possibly want or need was within a block or two. Salvation – there is a tram stop just outside the hotel that zips right downtown to the Duomo.

As it was getting on to 8 p.m. by the time we arrived at the inn, we quickly ditched the bags and walked down the street in search of food. Hubby has spent a little time in Milan and is sorta familiar with our area, so he’d already sussed out a small casual pizzeria-ristorante about two blocks away called Il Pavone. My first thought when we walked in was, “Wow, this place is pink.” The walls are a shockingly bright shade of Pepto Bismol. I guess I expected something more subdued for some reason. No matter, though.

A pretty, friendly hostess immediately squeezed us into some seats at the end of a six-top table. The place is small and tables are kinda jammed together. If you’re not careful, you could end up rubbing elbows unintentionally. To my relief, no one looked twice at us rolling in with the stroller. A big flat-screen television on the wall drew more attention from the diners. Honestly, it was sort of like eating in front of the TV at home. At one point, we were treated to what looked like an Italian game show hosted by a couple of old farts and featuring dance numbers by two scantily clad hotties.

There was a steady flow of customers in and out of the restaurant while we were there, which I took as a good sign, and the plates we saw coming out of the kitchen looked insanely tasty. Rustic, hearty, uncomplicated Italian food. I was excited. And starving.

My college Italian is really rusty, but I recognized most of the food items on the menu and ordered the fusilli della casa (the fusilli pasta of the house), a mixed veggie salad and a ½ liter of the house red wine, or as they called it, the “wine on tap.” Nice. Hubby got spaghetti bolognese and a beer. All of it was FABULOUS. My pasta was a huge plate of noodles dressed in a combination of tomato, pesto and cream. Mmm, mmm, good.

The salad was super fresh and unadorned with dressing, leaving me to dude it up myself with the table condiment bottles of olive oil and balsamic vinegar and a sprinkle of parmesan. Perfect, and so refreshing to get a salad with slices of really good juicy red tomato, as opposed to the tasteless crap variety you usually find back home. We also got a basket of bread to share. The wine was really light, VERY drinkable, and went down like water. I had to monitor my intake closely, lest I get completely smashed.

We also made the brilliant discovery that the toddler LOVES grissani, those long, thin, crunchy, crackery-type breadsticks. A couple packages of those kept him more than occupied enough for us to enjoy our meal at a relaxed pace. I couldn’t believe how many he ate. On the way out, I saw a plate pass by that contained gnocchi with gorgonzola, completely stopping me in my tracks. Guess we all know what I’ll be ordering on our next visit! We returned to the room where all three of us took baths and slept the sleep of the dead for about nine hours.

This morning, we enjoyed an impressive continental breakfast here at the hotel. They really do it right, I have to give credit where credit is due and this was some spread! Cold cereals, yogurts, breads and rolls of all sorts, cold cuts, cheese, boiled eggs, juice, fruit, you name it. And all included as part of our hotel package – yay! It’s rare to find inclusive breakfasts in European hotels, so this is something we’ll definitely make good use of.

I ate the chocolate croissant to end all chocolate croissants. This little gem was composed of a blend of regular pastry dough and chocolate pastry dough, all wrapped around a thick layer of chocolate baked inside. And I made it into a triple hit by eating a small single-serving size Nutella spread. I seriously thought for a minute I was going to lapse into a chocolate coma. The coffee was top-notch as well. I was thrilled to get a cafe latte in the truest sense — small, dual carafes of strong coffee and steamed milk poured simultaneously to create the perfect cup.

We took a stroll down the block to find a supermarket and stock up on some in-room supplies. It is Saturday morning, so I suppose we should have expected the store to be busy, but this was ridiculous. It was the biggest clusterfuck I’ve ever seen. Aggressive shoppers, practically rolling over you to get to what they want, no one gets out of your way or makes room for you to pass in the crowded aisles – and I’m talking about frail little old ladies and harmless-looking little old men! Sheer craziness.

The store stock was something else, though. The produce was absolutely beautiful – if peppers and eggplants can be sexy, these are some sexy vegetables. Tins of fresh olives, cheese, hanging salamis, yum, yum, yum. It was a feast for the senses. The butcher shop featured a whole row of huge cured hams hanging off the back wall; there was an entire aisle dedicated to pasta and another to wine. The baby food section made me smile – it was the first time I’d seen jars of baby food containing proscuitto and fresh mozzarella. We made our purchases and got out without losing any limbs or getting into any fistfights, then the toddler and I returned to the hotel so hubby could run a few errands for his upcoming trade show this week. He later came back saying he’d walked by another market during the course of his errands and realized that the store we went to was actually the “LoBills” of Milan. He’s promised to take me back later.

Italian baby food - proscuitto and mozzarella!

After the efficiency, cleanliness and formality of Germany, Italy is really something of a shock to the system. You just can’t get in a hurry here. If you do, you’re likely to find yourself cooling your heels while everyone else chills and takes things at their own speed, wondering what the hell your problem is.

Case in point – coming out of the train station last night, we were on the lookout for a taxi that could accommodate our bags, plus a carseat and collapsible stroller. Mind you, we’d gotten everything into a station wagon in Germany with no problem… the first driver who pulled over to attend to us got about half of our stuff in his car, which was plenty big, and then decided he didn’t have enough room. He unloaded our bags again and pulled off, no offer to wave over a fellow cabbie or anything, leaving us unceremoniously dumped on the sidewalk and back to square one. Several cabs later, hubby finally spotted a mini-van and we were set. His attitude was like “yeah, whatever, I’ll give you a ride,” but at least he got us to our destination.

Hubby calls Italy “scrappy.” It’s not that it’s dirty exactly, it’s just that everything seems slightly worse for wear and outdated. This is odd to say in Milan, perhaps the fashion capital of the world, but it’s true. The buildings look dingy, the streets are dirty and things just have a dilapidated feel. It is what it is, but I’m not complaining! I’m anxious to get into the main city center and take it all in, I’m sure there’s MUCH more to see and be seen.

It’s taken me longer than expected to get over the jet lag and settle back in, but I’m finally back up to speed. Within the past few days, spring has started to peek flirtatiously around the corner. Temps were 70 degrees yesterday with more of the same expected today. I was so inspired, I planted about three dozen Dixie cups worth of tomato seeds to start on my windowsill and am tending them like a new mommy waiting for their little green sprouts to emerge.

Hubby and I realized we hadn’t had a date night in about a month, since Killarney to be exact. I arranged for a babysitter (thanks Laura and Fiona!), we got dressed up and escaped for a few hours.

One of our favorite date-night spots here in Indianapolis is Mama Carolla’s, a charming little Italian restaurant on 54th Street, just next to the Monon Trail. The first time hubby took me there was toward the end of the first summer we were dating. I was moving to Chicago to take a job there and it was our last real evening out before I was due to leave. We declared the evening a special occasion, and it was the first time I ever saw hubby in a suit. (Hubba hubba!) We had a lovely meal, went to a backyard party afterward at the home of his ex-girlfriend, and then broke up a few weeks later, but that’s another story…

We return to Mama Carolla’s every so often, but figured out it’s been well over a year since our last visit. I was about halfway through my pregnancy the last time we were there. Baby is turning one year old next month. You do the math.

The parking lot was busting at the seams when we pulled in, leading us to wonder whether we should have a plan B in mind. Mama Carolla’s is usually busy enough that we have to put our names in for a table and have a drink at the small bar while we wait, but we were able to snag a table right off the bat tonight. Good thing, because we were both really hungry!

Ambiance is the name of the game here. The restaurant itself is in a cute homelike setting; tables are nestled into the nooks and crannies in rooms of varying sizes. The mood is romantic, with strings of lights draped around and cozy Italian-themed decor throughout. In the summer, a scattering of tables fills the outdoor patio, allowing customers to dine al fresco under the stars next to a small herb garden and pretty rose bushes.

We were seated in the same small alcove where we enjoyed that very first dinner nearly five years ago, but to our dismay, the table next to us was occupied by a somewhat boisterous couple. Really, I’m being polite. They were loud as hell.

With rooms this small, I understand there’s bound to be a certain amount of noisy reverberation, but this was ridiculous. The whole alcove held about 5 two-top tables, all full, which made it noisy to begin with, but this one woman’s voice absolutely drowned out everything else. I couldn’t even hear hubby ask me what I was going to order from directly across the table. After asking him to repeat himself twice, I knew we were going to be in trouble. I asked hubby if he thought we should move, but he shrugged me off.

A quick glance told me that loud woman and her companion hadn’t even ordered yet, and I found myself starting to dread the next hour or so. After a few more minutes of shrieked exclamations and pitchy cackles, hubby came over to my way of thinking and excused himself to speak to the hostess. Mr. and Mrs. Loudtalker made their way outside for a smoke and we made our well-timed exit. As the hostess graciously made her apologies and reseated us in a quieter room, my shoulders started to come down from where they were hunched up around my ears and I started to relax.

In the new room, we were seated next to an attractive family – a young mom and dad, a young grandma and grandpa, another young man and a baby in a high chair — very obviously the first child in the group and the center of everyone’s doting attention. Hubby and I kept stealing glances at the little one all night and sighing; we couldn’t help but think of our own little one back home. Turns out when we asked, they were the same age.

Our waiter was very good, attentive without hovering and a master of perfect pacing. Hubby started off the meal with a Peroni (Italian beer) and I with a glass of Shiraz. Both very acceptable choices.

Entrees at Mama’s start off with a small salad and a basket of warm bread. The salads were good, nothing spectacular, but certainly fine plates of fresh lettuce, etc. with a house balsamic vinaigrette. (Insider’s tip – nix the onion and request bleu cheese crumbles on top…) The yeasty, crusty bread is served warm in a small basket and wrapped in a lacy cloth for a homey touch. With a drizzle of olive oil and a little pepper, it’s darn near perfect.

Hubby and I are creatures of habit. When we find something we like on a menu, we tend to order it over and over again instead of branching out. Therefore, hubby ordered his usual dish — a rigatoni pasta with chicken, spinach and bits of bacon in a brown buttery sauce spiked with flecks of hot red pepper. Good stuff.

My go-to choice here is always the rosemary chicken lasagna, a gorgeous creation of roast chicken slices, mushrooms, tender noodles and cheese, drenched in tomato and alfredo sauces. Tonight, though, I pledged to be bold and try something new – the spinach stuffed ravioli with creamy pesto sauce. It was good, but not as good as the lasagna, which I’m sure I will return to next time around.

I was in the mood for a sweet bite after dinner and ordered a cannoli. In typical fashion, hubby said he didn’t want any, but then proceeded to inhale half of the dessert once it hit our table. The cannoli was smaller than I expected, but I was ok with the size once I took a bite and found out how rich it was. It was a crunchy little cone filled with an almost cloyingly sweet oozy cream, studded with some kind of little green pistachio crunchies and drizzled with chocolate syrup. Again, nothing exceptional, but good.

We made our way home with full bellies and renewed spirits. Gotta make a point to do the date night more often…
